Meal Planning for Picky Eaters

meal planning for picky eaters

Meal planning for picky eaters can be a nightmare! How do you meal plan when the members of your family have different eating restrictions or preferences? Maybe you have kids who are picky eaters, a family member with a food allergy, or you’re the only vegetarian in your house.  This can create extra work for you, but most of the time it’s not necessary for you to cook two completely different meals.  Here are tips to ease your frustration when you’ve got family members who don’t want to eat the same thing.

4 Tips for Meal Planning for Picky Eaters:

  • Focus on the common denominator. Does everyone love pasta, tacos, or baked potatoes but not exactly the same kind?  Set up a pasta, taco, or baked potato bar!  Make several sauces or toppings on the side and let each person customize their own plate.

  • Make the “disputed” ingredient on the side. Since I eat mostly vegetarian, many times I will heat up cooked, diced chicken breast in a separate small skillet for my husband.  I will make our main dish vegetarian (Stir Fried Cashew & Broccoli, Cheese Ravioli with Artichoke Hearts, Veggie & Grain Bowls, etc.) and Nick can add in chicken.

  • If you’ve got kids who only eat 3 or 4 things, meal plan those out on your calendar alongside the adult meals.  See if you can at least correlate some side dishes.  For example, if your kids love hot dogs and mac & cheese, make the adult meal something that will pair well with the mac & cheese. Or make the grown-up version of their meal. In this instance, maybe some gourmet sausages sautéed with green peppers and onions.

  • Use freezer meals for the “odd man out.”  Sometimes there’s a meal that everyone – except one holdout – loves.  In this case, have the odd person out choose a freezer meal that they like and heat it up for them.

By using the above tips, meal planning for picky eaters doesn’t have a to be so stressful! What do you do to make mealtime with picky eaters easier for your family?

Meal Planning for Vegetarians

meal planning for vegetarians, christine luken

Meal planning for vegetarians can be complicated for two reasons: 1.) It seems like much of meal planning revolves around the main protein dish. 2.) You may be the only vegetarian in your family of carnivores.

I admit there was an adjustment period when I made the decision to eat mostly vegetarian for my meals. My husband still eats chicken and beef so I had to make changes to the way I did my meal planning.  I thought it would be helpful to include some considerations and meal planning tips for vegetarians, in case there is one in your household.

Meal Planning for Vegetarians:

Cook large batches of quinoa, brown rice, and other grain blends once a week. I will cook a large pot of grains with a vegetarian bouillon cube and some herbs. Freeze leftovers or store in the fridge. This makes it east to throw together grain and veggie bowls or add some to a salad.

When you get home from the grocery store, spend a little time washing, cutting, and prepping your fruit and veggies. This will save you time when you want to make a quick stir fry, salad, or Buddha bowl.

Find some meatless meals that you whole family enjoys, such as Easy Black Bean Soup, Quinoa Chili, and pasta with marinara and veggies. I’ve got tons of vegetarian recipes pinned HERE.

Make the vegetarian version of whatever your family is eating. Examples from my household:

  • When I grill a beef burger or pork sausage for my husband, I’ll grill a black bean burger or vegan sausage for myself. All of side dishes will be the same.

  • I’ll make big salads and make the base of greens and veggies the same, customizing my husband’s with grilled chicken and bacon bits, and mine with garbanzo beans and extra vegetable.

  • I’ll bake potatoes and steam broccoli and other vegetables. My hubby and I can choose from a variety of toppings: diced chicken, chili, cheese, veggies, etc.

  • When I cook steak for Nick, I make myself mushrooms in wine sauce. Here is the easy recipe: Slice or quarter a package of portobello mushrooms. Combine 1/3 cup of red wine with 1 Tbs of olive oil and 1 tsp of Tuscan seasoning. Marinade mushrooms in wine sauce for 15 minutes. You can either saute them in a skillet over medium heat or thread the mushrooms on a skewer and grill them. I like the mushrooms served with wild rice so that it absorbs all of the yummy wine sauce.

Meal planning for vegetarians doesn’t have to be difficult, even if you live in a house full of “meat-atarians!”   Do you have any tips to share? If so, please post them below!

Saucy Ways to Eat Better and Save Money

homemade pesto

Today’s guest post is by Barney Whistance.

Everybody enjoys satisfying their taste buds and cravings by eating a scrumptious meal. Whether it’s homemade mac and cheese on a chilly night, fresh green salad with Caesar dressing or pizza with your favorite zesty ranch dip, you know you need the right sauce to elevate your food from plain nice to super yummy.

However, often at the end of our trips to the grocery store, we are left with a lengthy receipt of items bought, a big dent in our bank account and many questions buzzing in our heads. How did the bill reach that high? Did I buy things I shouldn’t have? Why does this always happen? Why are these oh-so-tempting and fancy-named sauces so darn expensive?

Well, the answer is because they are! And they aren’t expensive because of the product it contains but more so because of the brand it belongs to and the designing, packaging, and marketing that went behind it. Knowing that we wish that we could sometimes maybe try making them ourselves yet we are never able to muster up the motivation and effort to do that. Nonetheless, there are solid reasons which should encourage you to replace your store-bought sauces and dips with cheaper, healthier and tastier homemade ones.

Dipping Sauce

When you replace these commonly used dips with your own versions, you will be saving your hard earned money. Secondly, you will be healthier due to the reduction in sugars, salts, vegetable oils, and nutrition-less fillers like gum or starch. And thirdly you will enjoy a more renewed, sensitive and mature taste palate formed by tasting fresh and natural ingredients. The following are some healthy sauces you can easily make at home.

  1. Tomato Sauce: A staple in every American household as we buy 10 billion ounces of it each year, ketchup is found in around 97 percent of our homes.  But such high consumption of store-bought ketchup is unhealthy and unnecessarily expensive. Why waste money on a fancy looking ketchup when you can make the same quality sauce at home for less than a dollar? All you need are some cans of tomatoes and some simple spices. Cook it all together and add flour, or grind veggies like onions or beet for a thicker consistency and a unique flavor. To make it for a sassy dinner party you can experiment with red wine, basil, and parsley.  According to moneypantry.com, homemade ketchup is less than half to a quarter of the cost of a store bought one.

  2. Mayonnaise: Mayonnaise is so commonly used that we just expect it to be there in our fridge all the time, although the commercial versions can be costly, not great in taste and high in calorie and sugar content. However making it is very easy and a person who doesn’t know how to cook can even do it well. With just 5 ingredients and a blender, you will do your pocket and health a big favor especially if you, like most Americans, use it often.

  3. Pesto sauce: While sounding intricate and complex, pasta’s partner – pesto – can be made with any aromatic and tasty green leaf, nutty oil and hard salty cheese. If you have lemon, garlic, salt and olive oil, then you can make this sauce for any budget that you are under. You can add kale and other greens to up the nutritional value, in addition to the standard basil.

  4. Yogurt/Greek Yogurt: Another daily use food product, making yogurt will not only be easy but very cost effective, especially in Greek style. Most people assume that it’s very hard to make Greek yogurt but in fact the opposite is true. Making both types of yogurts is simple, it involves boiling and cooling the milk, mixing in a spoon of yogurt either natural or store bought and then keeping the mixture at a warm temperature for a few hours. That’s your yogurt, now remove whey or the watery liquid from it completely through a sieve, strainer cloth or tissues and what you are left with is the exotic Greek variety. Cost savings for homemade yogurt compared to a store bought one is up to 84%.

  5. Jams, curds and concentrates: Commercial store bought jams often seem extremely cheap but when you take a look at the ingredients there’s hardly 20% fruit. That’s expensive for a load of sugary water with preservatives. Making your marmalade and concentrates at home will be much cheaper, tastier and healthier. However, the tip here is to remember to stick with the fruits with are in season so that you can find them easily and cheaply and make big batches. Curds too are highly priced at stores with low-quality ingredients whereas the same can be made with all organic ingredients at home with less than half the price.

Granola bars, croutons, bread and baby food are some other food and snacks that you can easily make at home for yourself and your family. Remember the bigger your batch the more you save. You can also easily freeze the batches of most of these for later use. This way you will cut down your needless costs and keep your body slim and healthy. In the end, you will find that making more and more of your food at home will reap many benefits to your entire lifestyle.

7 Fun Ideas for Memorial Day without Breaking the Bank

memorial day

Today’s guest post is by Amy Nickson.

Every year, most of the Americans celebrate the Memorial Day weekend lavishly and regret later after checking their bank account.  This year, think twice before splurging money on the long Memorial Day weekend fun and frolic.  Celebrating a special day doesn’t always require spending a lot of money.

Many Memorial Day activities are absolutely adorable and won’t break your budget. Here you go:

1. Attend a local Memorial Day event

You may never notice but every year, on Memorial Day, some events usually take place near you. This year, don’t miss them. Catch your nearby Memorial Day event to have some great fun with your family. It can be a street fair, a carnival, a beach BBQ, or an open music program. These types of events are usually complementary or come with very low-cost entry fee. So, keep your eyes on the local newspaper or local listing nearby to know about the timing in detail.

2. Consider a day exploring trip

Why do you think enjoyment comes from only a long trip? Why don’t you think about a day trip to your local areas? Considering a hiking or a day trip to local sightseeing can be the best ways to get energized without spending a lot. Find out a place that is only a couple of hours away from your home. It can be fishing, camping, hiking, beach roaming, and exploring places as well. Pack some meals, water, and other supplies to enjoy some fun-filled time with your dear ones.

3. Host a sports event in your backyard

This year, invite your friends and neighbors to join a sports gathering in your backyard. Planning for a sports event can be the most fun-filled idea staying within the budget. To cut the additional food cost, you can make the event BYOF (bring your own food), or can keep only the basic stuff like lemonade and popcorn. Remember, the more games you plan, the more fun. So, keep some great sports like soccer, running with flag, Kan Jam, Cornhole or Bocce Ball. Don’t forget about little guests. Arrange some sports for children (running, baseball, softball, sit and draw) as well.

4. Have fun with kids at the nearby park

Free activities like cycling, see swaying, and swinging are full of fun for the kids. For working parents, Memorial Day weekend is the ultimate time to visit the local park with kids to experience boundless joy. Flying the kite, Frisbee, soccer ball are also great outdoor fun activities.

Family at the Beach

5. Visit the local beach

People who live in the coastal area are blessed. They can visit the local beach on every occasion for playing with salty water and sand. Enjoying a beach day doesn’t require a huge amount for having fun. You just need swimming gear, towels, and sunscreen with some snacks like sandwiches and coconut water.  However, if you want some floating fun, you can rent a paddle boat, canoe or kayak. You usually need to spend about $10 an hour for renting.

6. Enjoy a movie day on the Memorial Day weekend

The idea of catching up the latest movie with family and having costly snacks is meaningless when you can arrange an in-home movie day. By doing so , you can watch a number of your favorite movies at a cheaper rate. Rent movie from Redbox and stock up your favorite candy to enjoy some good time. You can also order your favorite pizza to say “good bye” to the kitchen for the whole day.

7. Don’t miss the parade

If catching the National Memorial Day parade in Washington DC can’t be possible for you, then check the parades scheduled in your area. At least, you can watch the parade show on TV or online while sitting with your family. Feel the vibes of the Memorial Day in your heart.

You need a break, you deserve a break. it is nearly halfway through the year, and you are busy with work, deadlines, financially stretched, puzzled with overwork; so figure out what to do, where to go and what you can actually afford. Thus you can enjoy a best ever Memorial Day without wasting your hard-earned money.

Home Remedies for Reducing Joint Pain and Improving Joint Mobility

Joint-Pain

Today’s post is by Katleen Brown.

Joint pain is a problem that many people face on a daily basis. Not only can this condition be painful, but it can also cause limitation in a person’s natural abilities and may even impair an affected individual’s ability to perform certain day-to-day activities, such as washing the dishes, typing out an e-mail or making a simple cup of coffee. While these activities may seem natural to many people, a person who experiences severe joint pain can confess that the tasks become much harder and even painful when the symptoms start to flare up.

The number one cause for joint pain is a disease known as arthritis. This term actually refers to more than 100 different types of diseases that affect the body’s joints, with the most common types being osteoarthritis and rheumatoid arthritis, as well as gout, psoriatic arthritis and fibromyalgia. Centers for Disease Control and Prevention reports that around 22.7%, or 54.4 million, of the adult population in the United States have doctor-diagnosed arthritis. They also report that, at the rate at which the disease is currently being diagnoses and by considering the rising trend in the prevalence of arthritis, as much as 78 million American may be diagnosed with arthritis by the year 2040.

Epsom Salts Natural Remedy

Dealing with Joint Pain… Naturally

Joint pain can be treated in many ways. If you visit a physician and complain about joint pain, they will most likely prescribe a series of NSAIDs for you. Painkillers and muscle relaxants can also be combined with NSAIDs in more severe cases as they can help to further reduce the pain and stiffness, as reported by WebMD. The most common types of NSAIDs that are used for joint pain, especially when the patient has a form of arthritis, includes Aspirin, Ibuprofen, Fenoprofen, Celecoxib and Diclofenac. Unfortunately, these medications can cause unpleasant side-effects, such as constipation and diarrhea, nausea and vomiting, headaches, drowsiness and a loss of appetite. Some of these drugs can also lead to ulcers, kidney problems and excessive bleeding.  The following tips and techniques can be used as alternative remedies to reduce joint pain and increase joint mobility without being at risk of these side-effects.

Exercise Relieves Pain And Improves Flexibility

Physical exercise on a regular basis can be very beneficial if you experience joint pain frequently. Even patients who have been diagnosed with arthritis can benefit greatly from exercising. Mayo Clinic explains that regular physical activity can help the muscles that surround joints become stronger, support your balance and help you maintain the strength of your bones. Physical exercise can also increase your energy (individuals with arthritis often feel weak and experience fatigue) and reduce your body weight if you are overweight (excess weight puts more pressure on your joints, which can lead to more pain).

Epsom Salts And Some Water

An Epsom salts bath is an age-old folk remedy. Epsom salt was originally produced in the springs located in Epsom, England. Even though the name includes the word “salt”, the substance isn’t really a type of salt. It is actually a mineral compound that consists of magnesium, as well as sulfate. There are many uses for Epsom salts. People use it to relax, to improve blood circulation, to regulate their blood sugar levels and even to treat constipation. Epsom salts are also often recommended to individuals who experience muscle aches and joint pain. It is reported that Epsom salts can also reduce inflammation, which is beneficial for individuals who experience pain and reduced flexibility in their joints.

Natural Remedies

Scientists and medical experts have discovered that many herbal plant extracts, spices and nutrients have medicinal properties that can reduce inflammation, inhibit pain receptors and even help to relief painful symptoms experienced by patients with arthritis. One of the most powerful natural substances is Turmeric, which is a spice that is used in curry and many other dishes. Apart from Turmeric, other compounds can also be used, such as Ginger, Extra Virgin Olive Oil, Dandelion Leaves, White Willow Tea, and Peppermint oil. Supplements that contain a combination of vitamins, amino acids, botanical extracts and minerals can also be used. One example is Flexoplex, which contains Methylsulfonylmethane, Cat’s Claw Bark Powder, Hyaluronic Acid, Bromelain and Trypsin – all of which are naturally extracted chemical compounds that provide a relief in joint pain, increases joint flexibility and even protects joints and bones from breaking down in patients with arthritis.

Conclusion

Joint pain can be discomforting and interfere with your ability to perform tasks that you are usually able to perform. It can also have an adverse impact on your productivity at work. Fortunately, joint pain can be effectively treated. While the most common treatment option is medication, you should consider natural alternatives, combined with regular exercise, to experience a relief in these symptoms without the development of side-effect caused by medication.

Save Money on Your Next Car

Save Money on Your Next Car

Today’s guest post is by Barney Whistance.

Buying a car is a big decision. There’s much to consider. You have to decide which make and model you would prefer to buy, how good its resale value is, how economical the car would be for you. As you are weighing all these pros and cons you are also planning your budget for the automobile. There is no denying that vehicles don’t come cheap. Therefore it’s necessary you make a choice that suits you perfectly.

A car that will last you for more than 150,000 miles without giving you major maintenance headaches is a good investment.  How many miles do you drive in a year? Some drivers might hit 150,000 in a matter of 5 years, and some aren’t even to 100,000 after 10 years.  Cars vary widely in fuel efficiency, which is why you should prefer to have a cheap but stable option. There are many things to consider when deciding on a budget, your method of payment, and your car model and manufacturer. Here is what you need to do in order to get the best deal and get the most out of your next car or truck.

Bargaining on the Internet:

You can buy just about anything on the internet today: a holiday gift, a stationary set for your office, your groceries, and yes, even cars. The Internet can be a convenient way to get the best deal on your car. This is because most sales people on the internet are hired on a salary and earn bonuses on volume instead of commissions based on the sale prices. This means that these people will have the incentive to give you the best price to make a sale.

Bidding War:

When purchasing a car, have as many options available as possible. When you are selecting a car dealer, talk to every dealer in your area that sells your preferred make and model. Then ask them to pitch you their best deal. Make a point in telling the dealers that you have also received offers from other dealers. This might even get them to give you an even a better deal. The offer could be in your budget or over. But a lower offer does not mean that you take their offer at once; take some time to think about and then make your decision.

Right Timing:

Don’t always go for this year’s model.  Dealers are under pressure to clear their sales floors of last year’s stock.  Not only will you save thousands, but you will also have a better opportunity to get more consumer reviews and feedback on the car’s performance. Two to three months after the new models come out is when prices start to drop on the previous year’s models.

Trading In Your Car:

Lastly, keep your car for as long as possible. Don’t trade your automobile after only a few years. Cars are one of the fastest depreciating assets on the market. Their values decrease as soon as you drive your new car off the dealer’s lot to your house.  Reap maximum benefits by owning it for as long as possible. When the car starts giving you more trouble than you can afford, only then plan on selling it. Most times, you will get more for your old car when you sell it to an individual versus trading it in at the car dealer.

Having a new car is a luxury that not all can afford, so make the best use of it. Purchase it with proper research on the car models and the deals you are getting on it. Pay cash if you can!  If not, put as much money as you can as a down payment and finance the rest for the shortest period of time that you can reasonably afford.  Remember, it is a financial decision that you and your family will have to live with for some time.
