Meal Planning Monday ~ The Dairy Debacle

This week’s post is by Christine Luken.

If you’ve been following my Meal Planning Monday blog for any length of time, you know how much I love cheese!  So, you can imagine my dismay when my natural health practitioner told me that I was sensitive to dairy and if I wanted to see real improvement in my allergy symptoms, I need to cut way back on milk products.  (My biggest allergy is mold… and cheese is essentially moldy milk, so this definitely stands to reason.)

I was glad that my health practitioner recommended a gradual replacement of my dairy products with alternatives rather than going cold-turkey.  She had me keep a food diary so we could pinpoint potential problems.  The first week of keeping the food dairy was an eye-opening experience!  I didn’t realize how much dairy I was eating every day: half & half in my coffee, whey protein in my post-workout smoothie, a slice of cheese on my breakfast sandwich, string cheese for a snack, cheese on my taco salad for lunch, cheese on my turkey burger for dinner, and Greek yogurt for my evening snack.  Yes, that is a LOT of dairy on a typical day for me.  So, one by one, I’ve started replacing all of that mucus-producing dairy with other options.

 My coffee is extremely important to me and I like it to taste good!  I normally sweeten it with a little stevia or coconut sugar, add a dash of cinnamon or cocoa powder, and some half-and-half.  I began replace ½ of the half-and-half with vanilla coconut milk until I worked up to all coconut milk.  I also liked the chocolate almond milk as a coffee creamer, but my husband drank most of it because it is that delicious.

Finding a replacement for my protein powder was a little more challenging.  I’m doing Shaun T’s Insanity program right now, and I feel better post-workout if I have a good protein shake.  My stomach is sensitive to artificial sweeteners, so I had to find one that was whey-free and sweetened with stevia.  I finally settled on PlantFusion which is actually a vegan protein powder.  It is slightly grainy, but blended with a frozen banana and berries, it’s very tasty.

I’ll admit, I had a lot of heartache over finding a replacement for my favorite evening snack – Greek yogurt.  It took me a while to warm up to coconut “yogurt” (cultured coconut milk).  I also realized that I don’t HAVE to have yogurt as my final snack of the day.  I could have some berries, nuts, or a little bit of Enjoy Life’s dairy-free dark chocolate chunks.  Or… some of this awesome Cookies ‘n Cream coconut “ice cream”!

Here are some other things I’ve learned during this process of culling out dairy from my diet:

  • I’m not alone in my quest to avoid dairy.  As I’ve talked to friends about it, I was surprised how many others were avoiding  it because of allergies, stomach issues, or a desire to avoid added hormones.
  • Butter doesn’t affect my allergies at all!  Yay for butter!!  The one dairy product I can eat with almost abandon!  (Grass-fed, organic butter is best – which thankfully I can buy that at my co-op).
  • By putting turkey bacon on my egg sandwich – instead of on the side – I don’t miss having the cheese.  Also, using hummus or pesto as a spread on my sandwiches serves as a good replacement for cheese.
  • I feel weird about asking the waiter to “hold the cheese” when ordering in restaurants.
  • I wonder, “Is it possible to OD on coconut products?”  I hope not!

Meal Planning Monday ~ Sinless Decadent Desserts

I’m typically not a strong lover of sweets, but lately I’ve had nothing but dessert on my mind. It doesn’t matter if it’s a cupcake, a cookie, or a slice of pie; if it’s sweet, I’ll gladly devour it in thirty seconds flat.

If you hadn’t guessed already, I’m currently about half way through my first pregnancy, and if the old wives’ tale is correct, then I’m definitely having a girl. It’s hardly scientific, but they say that those who crave sweets are carrying a girl; those who only want salty treats are having a boy.

But that doesn’t mean that this week’s Meal-Planning Monday post is only for those who have babies on the way. I have plenty of friends and relatives who struggle with maintaining a healthy lifestyle and satisfying their overbearing “sweet teeth.” It’s easy for a doctor or fitness guru to tell you to simply skip dessert or substitute fresh fruit for your favorite cake, but it’s only human to want to indulge every now and then. This week’s loaded schedule of recipes is focused solely on desserts that are big on taste and not on calories and fat.

Monday ~ Pumpkin Coffee Cookies 

If you’re anything like me, you find it difficult to get through a particularly manic Monday without lots of caffeine in your bloodstream. To be perfectly honest with you, I need several cups of coffee to get through even those rare stress-free days, so on Mondays, an extra pick-me-up is simply a necessity.

With their density relying on Greek yogurt and pumpkin puree rather than fatty substances like oil or butter, these cookies will satisfy your sweet tooth and your coffee craving without expanding your waistline. So go ahead, pour another cup of joe and indulge in a plateful of cookies without feeling guilty. You deserve it after making it through the dreaded first day of the traditional work week!

Tuesday ~ Fig & Fudge Brownies

Sometimes you just need a chocolate fix, but it seems like there has to be some way to get that fix without feeling terribly guilty afterwards. Put down that calorie-laden boxed brownie mix and allow me to introduce you to a pan of brownies that won’t leave a pit in your stomach after you eat two more rows than you intended on consuming (Admit it: We’ve all done it!).

The reason that brownies are typically so scrumptiously moist is because they’re filled with oils or butters, but these brownies get their stabilization and density from fruit puree instead of from fat. While I concocted these brownies with fig puree, pureed prunes or dates could also serve the same function. And don’t worry if you’re trying to serve these to a family that’s wary of health food; your secret’s safe with us! ;)

Wednesday ~ Not-So-Chunky Monkey Cookies

The combination of bananas and dark chocolate in this recipe is a match made in heaven when it comes to flavor, but these goodies are also righteous when it comes to nutrition. Not only do the bananas add a punch of potassium to your daily diet, ingredients like whole-wheat flour and dates provide more fiber than a serving of bran cereal. And even though dark chocolate could hardly be labeled as a “health food,” it does contain more antioxidants than other types of chocolate, such as white or traditional milk varieties.

Thursday ~ Dark Chocolate Avocado Torte

If you’re anything like my little family, you’re feeling hesitant about a dessert containing something green. However, you’ll thank me later if you choose to give this easy, no-bake recipe a spin.  The addition of sweet ingredients like maple syrup and chocolate chips offsets the distinctive taste of avocado, so you don’t have to worry that it will taste like a bowl of guacamole! The avocado flesh simply adds a creamy, velvety texture that will have you heaping your plate with seconds. Thanks to the lack of animal-based or dairy products, this dessert is also vegan-friendly.

Friday ~ Double-Chocolate Snack Cake

I first discovered this recipe when I was invited to a dinner party at the last minute and idiotically offered to bring a dessert, even though I had no recipe in mind. With only about an hour to whip something up, I came to the realization that I had no milk or eggs on hand, which it seems like just about every recipe out there needs! Thankfully, I had previously saved this dairy-free chocolate cake on Pinterest and decided to give it a try. It was a huge hit with the entire group of guests; I even had two separate guests beg me for the recipe before the end of the night.

While this recipe does contain sugar and oil, the amounts for which it calls are far less than other recipes for similar-tasting  products. To further lighten the fat and sugar content, just omit the powdered sugar dusting and chocolate chip topping. It’s just as mouth-watering without it!

Meal Planning Monday ~ Pumpkins Galore

           October is National Pumpkin Month, and I am definitely celebrating!  I love cooking with pumpkin, especially when it’s combined with cinnamon, nutmeg, and all-spice.  Canned pumpkin is on sale just about everywhere right now, so I am stocking my pantry with it so I’ll have plenty to last me through the winter.  I am finding all kinds of creative ways to use pumpkin, and I thought I’d share them with you this week.

  • Christine’s Power Pumpkin Muffins ~ I posted this recipe a few months ago on my blog.  These delicious, hearty muffins make a great breakfast or snack.  I make double batches and freeze them.  Thaw them out on the counter for an hour or two, or defrost them in the microwave.  I like to warm mine up in the microwave for about 30 seconds, and then slather them with a little butter and honey.
  • Pumpkin Spice Pancakes ~ I start with my favorite pancake recipe that I got from my Uncle John.  I add a cup of pumpkin, a scoop or two of vanilla protein powder, a teaspoon of cinnamon (or pumpkin pie spice), and ¼ cup of chopped walnuts.  These also freeze and reheat well, too.
  • Pumpkin Spice Latte ~ Nothing heralds the beginning of Fall like the annual comeback of Starbucks’ Pumpkin Spice Latte!  Unfortunately, my wallet can’t handle buying too many of them, and neither can my hips.  Thankfully, I found this copy-cat recipe that is light on calories and inexpensive to make.  Score!
  • Roasted Pumpkin Bowls ~ Here’s a cool way to add some flair to a Fall dinner party!  Serve pumpkin soup, beef stew, or chili in a roasted pumpkin bowl.  You can even eat the pumpkin when you’re finished with your soup.  Click here to see how.
  • Toasted Pumpkin Seeds ~ Don’t throw away those pumpkin seeds after helping your kids carve jack-o-lanterns this year.  Those little seeds are full of vitamins and minerals, and can be toasted and flavored a variety of ways.  How about some Caramelized Spicy Pumpkin Seeds?  Or Cajun Spiced Pumpkin Seeds?  Maybe some Drunken Pumpkin Seeds soaked in whiskey?  Yes, please!
  • Pumpkin Spice Cake ~ Pumpkin Spice Cake with cream cheese frosting is by far my favorite way to enjoy pumpkin!  I use the recipe from the “Cake Mix Doctor Cookbook,” by Anne Bryn, below.  I hope you enjoy it as much as I do!

 

Pumpkin Spice Cake

From The Cake Mix Doctor by Anne Bryn

  • 1 Package Spice Cake Mix (18.25 oz.)
  • 1 Package Vanilla Instant Pudding Mix (3.4 oz.)
  • 1 Cup of Pumpkin, canned or fresh (mashed)
  • ½ Cup of Oil
  • ½ Cup of Water
  • 3 Large Eggs
  • 1 Teaspoon of Ground Cinnamon
  • ½ Teaspoon of Ground Ginger
  • 1 Tub of Cream Cheese Frosting
  • ½ Cup of Chopped Pecans

Directions:

  1. Preheat oven to 350 degrees.  Spray a 13 x 9 inch pan with cooking spray.
  2. Place all ingredients, except frosting and pecans, in a large mixing bowl.  Blend with an electric mixer on low for 1 minute.  Scrape down sides of bowl and blend on medium for 2 minutes.  Pour batter into prepared pan and place in the oven on the middle rack.
  3. Bake the cake until it springs back when lightly pressed, 32 to 35 minutes.  Allow cake to cool.
  4. Frost cake with the cream cheese frosting.  Sprinkle with chopped pecans.  Slice cake into squares and serve.
